SETTING I love eating at Stevie Adair’s award winning restaurant, I know the food is going to be fantastic and the service impeccable. Hidden within the courtyard of Musselburgh’s C19th Eskmills, the imposing entrance leads to the airy interior that’s split into sections; the stylish polished walnut-panelled bar under a domed ceiling and the glass-enclosed dining room that gives the restaurant its name.

FOOD The menus offer sophisticated, yet simple food, with much of the produce sourced locally or at least from Scotland. Homemade bread is quickly polished off as we wait for our starters. I can never resist the parfait; I love the smooth texture that is so good with the sweet onion compote. The other half tucks happily into a classic - Stornoway black pudding, pan-fried with caramelised apples, sweet fruit and spicy pudding - you can’t beat it.

Poultry here is never dry and the free-range chicken is shockingly moist, surrounded by a light broth with summer vegetables. A good benchmark for any restaurant is how they handle a steak. The sirloin oozes its juices into the peppercorn sauce and a nod of approval says it all; no mucking about here with any other type of potato, it has to be chunky chips.

If it’s on the menu, the chocolate torte is an absolute must, but Scottish summers can sometimes be a bit damp, then the Pimm’s and strawberry jelly is summer in every spoonful. Ice creams and sorbets are all made in house and offer a lighter choice for pudding. Ever fancied learning some tricks of the trade or try making some of the Glasshouse dishes at home?
